The story
Oesterbeurs, at Wijngaardstraat 2 in Yerseke, is a French seafood restaurant that earned a Michelin Recommended listing in 2026. It occupies one of the oldest buildings in the village, a short walk from the Oosterschelde where its oysters, mussels and lobsters come from.
The Zeeuwse platte oester is sold by the half dozen, on ice or in three different preparations. The kitchen also serves a tafeloester, raised in purified Oosterschelde water, either raw or gratinated with green herbs and garlic. Smaller starters include gravad lachs with Zeeland mustard and a European lobster salad with truffle and green asparagus.
Owner-chef Maurice Mulder works in a classical French tradition. The Zeeland bouillabaisse comes with rouille and a bowl of shellfish, and the lobster bisque is finished with Frapin VSOP cognac. Sole meunière is served at 500 grams, and the fruits de mer for two or more includes half a grilled lobster, razor clam and langoustine. The restaurant has appeared in the Lekker500 Top 500 every year from 2019 to 2026.
The dining room has a living-room feel, with velvet tub chairs and white-plastered walls. On sunny days there are tables on the street terrace. Madelon Mulder, the sommelier, explains the dishes at the table. She might pour Zilte Trots, a johanniter wine from the old creek area near Yerseke, with the lobster.
