The story
Hemel & Aarde is a modern French restaurant at Keistraat 8 in Utrecht, and Gault&Millau awarded its kitchen 14.5 points in 2026. The restaurant occupies the former monumental Polman's House and shares the building with Hotel The Nox.
Chef René van der Weijden plans the menus around what the season offers. His cooking relies on fermentation, preservation and dry-aging, and vegetables carry much of the weight on the plate. Guests choose between two rotating menus, one with meat and fish and one fully vegetarian.
Reviewers have praised a lamb dish prepared three ways, with a slow-cooked neck and a loin coated in wild garlic crumble. The meal often opens with sourdough and vadouvan butter, and the welcome drink is a kombucha with apple, cucumber and angelica. This modern French kitchen keeps its flavors bright and seasonal.
