The story
Sequenza sits at Spui 224 in The Hague, a small French restaurant with international influences that Gault&Millau scored 13 in its 2026 guide. The facade is plain enough that you can walk straight past it, a point the Lekker500 reviewers make more than once.
Groningen-born chef Thales Wolters took over Sequenza in the autumn of 2022, after years of working abroad. Jelmer Kok joined him a year later. They cook in the classic French manner, with Asian influences, and the menu changes every few weeks with the season. The cooks also act as hosts, which suits the restaurant's own description of itself as intimate and a little unconventional.
Reviewers have praised a mackerel dish with rolled cucumber ribbons, pickled cucumber balls, sambal brandal and ginger. Poached veal tongue comes with roasted langoustine and a sauce of shellfish, smoked paprika and sea buckthorn. Other dishes have included sea bass with fermented garlic and calamansi, crispy beef cheek, and a rhubarb dessert with Sichuan pepper and white chocolate. Menus run across several courses, and an all-in package covers wines, water and coffee with friandises.
The dining room is long and living-room-like, with linen-covered tables and upholstered wall panels that soften the sound. In good weather, tables move out to the inner courtyard. Koen Cramer, host and sommelier, pairs the wines and keeps a handwritten notebook of favorite labels for guests to browse.
