Chef Alexander Wong's cooking

Xīn means "new" in Chinese, and the name fits Wong's approach. He reimagines traditional dishes and gives familiar flavors a fresh perspective. His cooking balances bold, sharp flavors with a refined touch.

Wong grew up in Rotterdam and developed his craft in several demanding kitchens, including La Pergola in Rome. A foundation in classical French technique shapes how he builds his modern Chinese dishes.

The menus

Guests can choose a chef's menu at €88 per person, served per table, or a signature menu at €65 per person. Groups of five or more are served the chef's menu only. Gault&Millau awarded the restaurant 13.5 for 2026, praising the way the kitchen shows that Chinese gastronomy reaches well beyond its familiar classics.
