The story
Huson stands at Scheepstimmermanslaan 14 in Rotterdam's Scheepvaartkwartier, where owner-chef Mark van Wijngen runs a modern cuisine restaurant that earned a Gault&Millau score of 12 in 2026.
Mark van Wijngen took over Huson in 2015 and cooks from a menu of his favourite dishes, alongside classics from the past twenty years. Reviewers describe a classical-modern kitchen with subtle Asian influences. The Michelin Guide lists the restaurant as Recommended for 2026.
The tuna and crab starter arrives as a tower of raw tuna around crispy fried crab, avocado and cucumber, finished with tomato sorbet and wasabi mayonnaise. Lamb comes two ways, a rosemary-grilled fillet and a slow-cooked neck, set against basil and garlic cream. The oxtail is braised until tender, and its foie gras melts into the ragout as you eat. For dessert, a cheesecake mousse with elderflower-marinated strawberries is light and creamy.
Two adjoining rooms hold leather armchairs, an open kitchen, a dining bar and a prominent wine cabinet, with a small terrace out front. The house limoncello is 100% organic and made with 75 grams of fresh lemon per bottle. It won a silver medal (91 points) at the International Wine & Spirit Competition 2023. Coffee arrives with madeleines and friandises.
