The story
De Salentein is a modern Argentine restaurant at Putterstraatweg 7 in Nijkerk, Netherlands, and Gault&Millau awarded it a score of 13 in 2026. The Argentine kitchen draws on the estate's own cattle and its own vineyards, so the beef and the wine both come from the same source.
Rik Jansma has led the kitchen since June 2023, after running Basiliek in Harderwijk. The meat comes from cattle raised on the estate's Argentine pastures. The 2026 Lekker500 Top 500 review singled out a beef tartare with potato croquettes, caviar and a Marigold egg, and a sirloin on brioche with truffle and foie gras.
The wine list comes from Bodegas Salentein, set at the foot of the Andes in Mendoza's Uco Valley. The dining room sits in the former coach house of the estate, with round tables dressed in white linen and a relaxed, homely feel.
