The story
Tout à Fait is a modern French restaurant at St-Bernardusstraat 16 in Maastricht, awarded one Michelin star in 2026.
Bart Ausems has cooked here as chef-owner since 1999, with his wife Sandra running the floor as hostess. Roasting holds a prominent place in his kitchen, a habit he brought home from an internship at Paul Bocuse in Lyon. Gault&Millau gave the restaurant 15.5 points in 2026. Ausems plans his year around the seasons, from asparagus in May to partridge in September.
The spring menu pairs Geuldal lamb with white asparagus and wild garlic. Watermelon with goat cheese and herb salad appears on every menu. The seven-course Chef's Menu costs €185 and opens with Canner lobster, radish, kohlrabi and dill. Dessert might be raspberry with verveine and Dael's Droum, a local Maastricht tea. Crêpes Suzette are prepared at the table.
The restaurant occupies an old townhouse in the Jekerkwartier, spread over three split-level floors. The open kitchen sits on the top level, and a lounge near the entrance serves aperitifs. Sommelier Mike Jacobs leans toward classic French bottles, and the cheese trolley is a fixture of the French kitchen's finale.
