The story
Le Bon Vivant is a Dutch and French kitchen at Capucijnenstraat 91, 6211 RP, in the centre of Maastricht. Gault&Millau gave it a score of 14 in its 2026 guide, and the restaurant sits in a vaulted cellar on the spot where the Marres-Ceulen family brewed beer from 1859.
Owner and head chef Björn Dijkstra cooks seasonal menus, with produce sourced as much as possible from local growers. The Dobbel Good menu takes its name from Dobbel Aajt, an old brown ale, and each course is matched with a wine or an alcohol-free cocktail. Recent dishes include red prawn with Iberico belly bacon and red vermouth, and a poached, then grilled, rabbit back fillet.
The dining room is vaulted and warm, with the brewery's history still in the walls. Gault&Millau suggests it for a quiet dinner for two or a meal with friends. A cheese buffet placed in the centre of the room suits guests who like to linger.
