The story
HAVN, at Oude Doelenkade 7 on Hoorn's historic inner harbor, is a modern cuisine restaurant that received the Michelin Bib Gourmand for 2026, the guide's mark for good cooking at fair prices. Chef and owner Robin Blaauw builds a seasonal card from Spanish, Scandinavian and Dutch elements, with a barbecue running through it.
Robin Blaauw grew up in Hoorn and trained as souschef at Ron Gastrobar in Amsterdam, working for eight years under his uncle Ron Blaauw. He then spent about five years as executive chef at Hotel Castell d'Empordà in Spain, cooking for three kitchens at once. He has said that simplicity can work better than a dish with 26 ingredients, and that idea runs through the plates. Gault&Millau lists the restaurant with a 13 for 2026, describing a kitchen that starts from the product.
The menu is built from small plates, and the house suggests two or three per person for a full dinner. Reviewers singled out a scallop as one of the best they have tasted, a vegetarian dim sum with king bolete, and a turbot with beurre blanc brightened by Japanese vinegar. Robin's Route runs from snacks through four courses to dessert, and it is served to the whole table. Dessert often means the mille-feuille with Swiss cream, banana and wild strawberries.
The dining room is spacious, with warm tones and a large open kitchen at its center. A bar sits near the back, where guests can order a snack and watch the large cuts of meat in the dry-aging cabinet. Reviewers describe the mood as unpretentious and lively, with couples, families and groups all at ease. In good weather the terrace looks out over the harbor, and the restaurant also hosts private dining and events five days a week for groups of up to 120 guests.
