The story
Zarzo, at Bleekweg 7 in Eindhoven, is a Mediterranean restaurant that earned one Michelin star in 2026. Chef-owner Adrian Zarzo Habraken runs the kitchen, and his Spanish roots show in dishes that move between seafood, lamb and veal.
Adrian Zarzo Habraken was born in Valencia and opened Zarzo in the city centre in 2013. Before that he trained at Parkheuvel and De Librije. Lekker500 describes his cooking as contemporary and precise, with Spanish influences that appear in the plating and the flavour combinations. Acidity does much of the work, lifting rich ingredients without heaviness.
Langoustine arrives with rhubarb, a small fried squid, vadouvan sauce and a manzanilla sherry foam. Lamb rack comes with its own jus, grilled little gem lettuce and Belper Knolle cheese. Veal shank is marinated for three hours before it is pan-fried. Dessert often pairs goat yogurt ice cream with black pepper and a nod to arroz con leche, the Spanish rice pudding.
The dining room sits in a post-industrial basement, with tables facing the open kitchen. Guests usually start with drinks and bites in the ground-floor lounge, where a chef's table seats small groups. Tasting menus run from four to seven courses. Sommelier Stefan Emmen leads a wine list that Lekker500 calls one of the largest in the Netherlands, and the same guide ranked Zarzo 16th in its 2026 edition.
