The story
Vane sits at Vestdijk 5 in Eindhoven, on the thirteenth floor of the NH Collection Eindhoven Centre hotel, and Gault&Millau awarded it 13.5 points in 2026. The French kitchen is led by executive chef Carlo Chantrel, who cooks classic French with international influences.
Chantrel's menus draw on a classic French base with Asian, Mediterranean and other international accents. Gault&Millau describes a single menu where each main ingredient is handled with care and surrounded by balanced details. Lekker500 found the flavour pairings original and the presentations striking.
Reviewers pointed to corvina with coconut onion foam and pistachio vinaigrette, and to lamb served several ways. A 2025 visit began with hand-cut salmon tartare over oyster ice, then North Sea bisque with cod brandade, and a roasted lamb loin on celery purée with a vadouvan-spiced jus. The 2026 dessert was strawberries, rhubarb and pink peppercorn mousse. One reviewer found the wine pairings uneven, with a Sicilian red clashing with the lamb.
Floor-to-ceiling windows give a view across the city, and the room feels cosmopolitan with a warm, unfussy welcome. The Flavours menu offers a casual alternative with a black angus burger, a Kung Pao chicken spit and a 250 gram entrecôte. Upstairs, the Skybar serves cocktails such as Amber Comb, built on corn whisky, honey and a trace of smoke.
