The story
Restaurant Le Sable sits at Zandoerle 5 in Veldhoven, just outside Eindhoven, where the kitchen works from a modern French base with international influences. Gault&Millau gave it 15 points in 2026, and the restaurant is listed in the Lekker500 guide as well.
Chiel Sap cooks classic French technique and adds his own inventive touches. Before opening here, he trained under Margot Janse at The Tasting Room in Franschhoek, South Africa. Meals usually begin with a run of amuse-bouches, among them a balsamic meringue filled with foie gras and chocolate.
A grilled Carabinero prawn comes with ginger-marinated watermelon, fennel, pine nuts and bisque foam, with burrata to round it out. The chicken ballotine is wrapped in chicken skin and served with morels, black olives, Albufera sauce and grated Belper Knolle, a spicy Swiss cheese. Langoustine tail, seared and set over slow-cooked pork belly, arrives with a sabayon of sherry.
The dining room occupies a converted farmhouse in Zandoerle, and the tone stays relaxed. A garden terrace offers seating outdoors when the weather allows. Laura van der Velden, who is also the sommelier, pours from a list of more than 300 wines that changes weekly. Her petit fours come with coffee, and the cheese trolley is a good reason to save room.
