The story
De Swarte Ruijter in Deventer is a modern French kitchen at Holterbergweg 7, 7451 JL Holten, and it holds one Michelin star (2026). The restaurant sits in a thatched-roof villa from the 1930s on the slope of the Holterberg, where the cooking rests on French classical technique and a close link to nearby farms and forests.
Head chef Erik de Mönnink plans the kitchen garden with a local vegetable grower and forages for mushrooms and wood sorrel. The menu changes with what the season brings, and the sauces and garnishes tend to be built around that produce. Gault&Millau awarded the restaurant 14.5 for 2026, praising the wide choice and the good wine selection.
Recent visitors have singled out a tuna starter served two ways, as a velvety tartare and a seared sashimi, brightened by crisp cucumber and a sweet-and-sour note. A sea bream ceviche with mussels, artichoke and carrot and a sole fillet with Pata Negra ham, celeriac and summer truffle have also earned praise. The dessert of passion fruit, white chocolate and rum-soaked baba is a playful finish. A fully vegetarian menu is available on request.
The villa holds ten guest rooms, so an overnight stay after dinner is an option. On fine days the terrace under the trees is the place to linger over a long meal. Two smaller rooms, the Heerenkamer and the Opkamer, suit private dinners for small groups, and there is a large private parking area.
