The story
Wild Atelier, at Amersfoortseweg 86 in Hoog Soeren near Apeldoorn, is a Dutch and French fine dining restaurant that Gault&Millau scored 16.5 in 2026. It sits within Hotel De Echoput, and its contemporary kitchen works mainly with game and wild produce.
Chef Jonathan Zandbergen, an SVH master chef, opened the restaurant in June 2025 with the family behind De Echoput. The former hotel bar was converted into a dining room of warm wood tones and natural materials. Guests enter through the hotel's entrance, and the kitchen works with what grows and roams in forest, field and water.
The menu comes in two forms: Smaak van Nederland, with fish or meat, and Bos en Tuin, a vegetarian menu. Lekker500 singled out cannelloni filled with venison tartare, pastrami, chopped oyster and caper leaf. Wood pigeon is carved at the table from a cast-iron pan and returns to the plate in several preparations within minutes.
