The story
VanOost is a fine dining French kitchen with Japanese influences in Amsterdam, at Mauritskade 61, on the first floor of Pillows Hotel Maurits at the Park. Gault&Millau awarded it 14 points for 2026, a score that places it among the city's most closely watched tables.
Floris van Straalen started as a kitchen porter at 15 and trained under Sergio Herman and Dennis Kuipers. He now works with three-star chef Jannis Brevet as his mentor. The cooking leans on vegetables and seafood, and the dishes move between Japanese and French technique. Every menu can be ordered in a vegetarian version, from a five-course chef's menu to a seven-course Chef's Table at the marble bar of the open kitchen.
The Anjou pigeon Rossini comes with foie gras, black truffle and Madeira, a plate built on French tradition and cooked with precision. The Indonesian langoustine is served with bumbu, katjang pedis and sambal. Reviewers have also praised the butter lobster, a piece of lobster set in a glossy, creamy curry sauce.
The dining room sits in a former university building from 1908, with original wooden beams, stained glass and large windows over Oosterpark. Sommelier Rick Neuteboom curates the list, which earned VanOost the Wine Spectator 2025 Award of Excellence. Non-alcoholic pairings are available for guests who prefer to skip wine.
