The story
Sinne, at Ceintuurbaan 342H in Amsterdam, is a modern French kitchen with Mediterranean and Eastern accents, and it earned one Michelin star in 2026. The restaurant sits in the Pijp and runs a fixed, straightforward menu with a choice of two dishes per course.
Alexander Ioannou leads the kitchen, and he describes his daily goal as finding the best dish through the balance of fresh produce and spices. Gault&Millau awarded Sinne 15 points in 2026, praising nearly ten years of work by Ioannou and his wife, Suzanne Sluijter, who runs the dining room as hostess and sommelier. Vegetarian options appear on every course.
The grilled celeriac with a 63-degree egg yolk and smoked garlic sauce is the signature. Other dishes include confited potato with onion compote and Noorderkaas, and marinated squid with fennel and Thai vinaigrette, finished with a squid tuile. The meal ends with a burnt Basque cheesecake, blueberries and pistachio sorbet.
The room combines abundant wood with an open kitchen, and it feels chic without being formal. Sluijter pairs the celeriac with a lightly smoky Spätburgunder from Braunewell. The wine list includes a dedicated section of alcohol-free labels.
