The story
Visaandeschelde is a seafood restaurant at Scheldeplein 4 in Amsterdam, where owner-chef Michiel Deenik has earned a Gault&Millau score of 14.5 for 2026. The restaurant opened on 30 March 1999 beside the RAI, and its seafood kitchen still builds most of its menu around fish from the North Sea.
Michiel Deenik runs the kitchen with his wife Saskia, and their son Max now works as sous-chef. The team buys whole fish and cuts them on the spot, so very little goes to waste. The menu follows the seasons, and a monthly chef's menu rotates alongside the à la carte selection. The Michelin Guide lists the restaurant as a Recommended address for 2026.
Oysters are the natural starting point, from fresh Irish Mór served with shallot vinaigrette to seared oysters with potato mousseline. The Visaandeschelde salad pairs lobster and duck liver curls with truffle and balsamic. Bouillabaisse arrives thick with shellfish, served with gruyère and rouille, and the sole meunière comes with its own jus. A vegetarian chef's menu is available, and a fruits de mer platter can be arranged if you give the kitchen advance notice.
The dining room has a black-and-white checkered tile floor, small tables dressed in white linen, and black leather banquettes. A mirror wall decorated with blue glass fish gives the room its character. In summer, guests can eat on the terrace outside. The wine list is extensive, with a strong focus on old-world bottles and plenty available by the glass.
