The story
Lastage, at Geldersekade 29 in Amsterdam, runs a French-leaning kitchen that Gault&Millau scored 15.5 for 2026. The restaurant fills a narrow canal house, and its Dutch and Mediterranean touches sit alongside the French base.
Owner-chef Rogier van Dam trained in classical French cooking but keeps his roots in the Noord-Hollandse polder. He makes much of his own sausage and ham and smokes and ferments ingredients in-house. His partner Elise Moeskops runs the floor and the wine list, and the Michelin Guide lists the restaurant as Recommended for 2026.
Recent menus have included tartare of mackerel with prawn, corn, kohlrabi and jalapeño, and watercress soup with smoked eel, beetroot and Piedmont hazelnut. Dutch lamb arrives with eggplant, asparagus and vadouvan, and the cheese course features Epoisses in brioche with quince. Guests can choose three to six dishes or an eight-course flight, and the courses change with the season.
