The story
Neder at Laat 85 in Alkmaar is a Dutch country cooking restaurant where chef Brian Luikel holds a Gault&Millau score of 14 (2026). The name stands for Dutch, and the kitchen works only with products from Dutch soil, air, or sea. Dinner and lunch are both served in the historic city centre.
Brian Luikel founded the concept and runs it as owner, head chef, and maître d'. He preserves and ferments to keep seasonal produce in use all year. The restaurant has its own wild forager, and Brian often forages in the countryside around Alkmaar himself.
The menu is a tasting of small dishes that change with the seasons, and all guests eat at the same time. Early courses have included a cream of twenty-month-old Beemster cheese with pickled elderflower blossoms. A waterzooi with lardo and an ikejime-cut sea bass served with Dutch soy sauce have also appeared. Barbecued beetroot with smoked egg yolk and Texel mustard closes the savoury part.
The dining room sits in a three-hundred-year-old building furnished in traditional Dutch style, with old wooden beams and warm wood tones. Sommelier Peter Bouwman curates wines from the Low Countries, and the non-alcoholic pairing is made in-house. Coffee is not served, since beans do not grow in the Netherlands. Vegetarian alternatives are available, but vegan dishes, cow's milk protein allergies, and egg allergies cannot be accommodated.
