The story
Merlet, at Duinweg 15 in Schoorl near Alkmaar, is a modern French restaurant with a Michelin star (2026). The dining room sits on the edge of the Schoorl dunes, and the kitchen builds on French technique with Eastern influences.
Marco Helsloot has led the kitchen as chef de cuisine since February 2024. Classical French technique remains the foundation, and vegetables take a prominent place on the menu. Gault&Millau awarded the restaurant 17 points in 2026 and named Helsloot Young Chef of the Year in 2025.
The current menu lists wild sea bass from fisherman Jack with green curry, jalapeño and basil, and North Holland lamb served as a terrine of lamb neck with a cumin jus. Reviewers have singled out an eggplant mille-feuille with confit lemon and tomato, which holds up well as a vegetarian course. A weekly rotating multi-course menu runs alongside à la carte options.
The dining room is spacious and modern, with art pieces throughout and an open kitchen. Large windows look out over the Schoorl dune area. The adjoining hotel means an evening here can end with an overnight stay.
