The story
Trois Visages is a contemporary French restaurant at 7-16-21 Ginza, Chuo-ku, Tokyo, and it holds one Michelin star (2026) alongside a Gault&Millau score of 15.5. Each plate is built around one ingredient chosen at its peak, and the dinner menu runs to eleven courses.
Chef Ryouhei Kuninaga, born in 1988 in Yamaguchi, spent about nine years at Le Mange Tout under Noboru Tani. He then worked at two one-star restaurants in France before returning to Japan and opening Trois Visages in April 2022. The kitchen is open to view, so guests can watch the French cooking take shape at the counter.
The room uses plaster and diatomaceous earth walls, Yakushima cedar, and Ōya stone. Dining chairs by Hans Wegner and Børge Mogensen sit beneath Poul Henningsen lamps. The tableware comes from potters in Kasama, Ibaraki, along with Sghr glass and Cutipol cutlery, and the house eau de vie from Mitosaya is also served as a digestif.
