The story
ShinoiS is a Chinese restaurant at 2F, 4-2-7 Shirokanedai, Minato-ku, Tokyo, and it holds one Michelin star in the 2026 guide, which cites high quality cooking.
Hiroyuki Shinohara trained under Tan Yanbin at Akasaka Rikyu, then worked in Hong Kong kitchens before running the pass in Nishi-Azabu. He won the RED EGG grand prix at RED U-35 in 2015 and later served as executive chef of The Peacock Room in Shanghai. The name plays on "Chinois" and "Shino is", a way of saying this is his version of Chinese cooking.
Shinohara keeps to Chinese tradition while bringing in new techniques and ingredients. He sometimes crosses the dishes of different regions and ethnic cuisines. The dinner course changes with the season and starts at 37,500 yen (tax included, service charge extra). A Chinese tea pairing chosen by the chef and an alcohol pairing each start at 17,500 yen. Gault&Millau scores the kitchen 15.5 for 2026.
The restaurant opened in November 2019 with 11 seats. The counter takes up to seven guests and a private room seats four, all non-smoking. Courses begin for everyone at once, so arriving late means joining the meal in progress.
