The story
Nabeno-Ism is a French restaurant at 2-1-17 Komagata, Taito-ku, Tokyo. It holds one Michelin star in the Michelin Guide Tokyo 2026 and a Gault&Millau score of 17 for 2026. The kitchen works in classical French technique and adapts it to the Asakusa neighborhood.
Chef Yuichiro Watanabe, known to his guests as "Nabe chef," leads the kitchen. The restaurant's name combines his nickname with "ism," a word for a personal creed. He describes the aim as keeping traditional French cooking while continuing to evolve it, shaped by the training he received over many years.
Watanabe developed an all-purpose steak sauce without additives. It is soy-based, made with white wine, and contains no preservatives. The restaurant sells it online, and it works with beef, fish, and rice, or as a marinade in place of soy sauce.
