The story
Ginza Shinohara is a Japanese kaiseki restaurant at B1F, 2-8-17 Ginza, Tokyo, awarded two Michelin stars in 2026 for the cooking of chef Takemasa Shinohara.
Takemasa Shinohara was born in 1980 in Shiga Prefecture and was once a promising karate athlete. He turned down university offers to learn a trade and trained at Sangencha, a Kyoto kaiseki restaurant serving Kansai-style cuisine. At 26 he opened Shinohara in Shiga, which grew into a prominent name over nine years. In 2016 he moved to Tokyo and opened this restaurant.
The kitchen still draws on the natural bounty of the rural landscape, as it did in Shiga. The result is a Japanese course menu that has held its own in one of Tokyo's most competitive dining districts. Gault&Millau scored it 17 in 2026, alongside the Michelin recognition.
Counter seating puts guests close to the kitchen, and the restaurant keeps large sake and wine selections. A non-alcoholic pairing and a private room are also available. The entrance is about a 3-minute walk from Exit A11 of Ginza Station.
