The story
Den, at 2-3-18 Jingumae in Tokyo's Shibuya-ku, is a counter-led Japanese kaiseki restaurant that holds two Michelin stars for 2026. Owner Zaiyu Hasegawa builds a fusion-leaning menu on home cooking, with each course shaped by what the kitchen receives that day.
Hasegawa describes his cooking as home food, made with the hope that the person eating it will smile. The menu is omakase only and changes daily, because each course depends on the ingredients delivered that morning. Dishes are finished one at a time, so service can take a little longer than expected. The World's 50 Best Restaurants ranked Den 32nd in 2024.
Guests sit at the counter, which suits a kitchen that works in full view of the room. Schlemmer Atlas describes the setting as a stylish urban atmosphere, with a broad selection of wines and spirits. Den also runs Den Kushi Flori with Chef Hiroyasu Kawate of Florilège, a separate contemporary tasting course.
