The story
Kamigatachuka SHINTANI is a Chinese restaurant at 4-21, 530-0016 Osaka City, holding one Michelin Star in 2026. Counter seating puts diners close to a kitchen that treats broth as the foundation of its cooking.
The course menu is built around tang, the Chinese soup tradition, and Osaka's dashi culture. A Chinese saying pairs the singing of opera with the chef's broth, and the kitchen sets that beside the Kansai use of kombu and light soy sauce. Seafood and vegetables lead the progression, echoing Osaka's old food history. Gault&Millau gave the restaurant 15.5 in 2026.
Seasonal produce comes from the Kinki region, including fish from the Pacific, the Sea of Japan and the Seto Inland Sea, along with mushrooms, wild vegetables and game. The chef also dries abalone and seasonal fish in-house, using Hunan techniques. He selects the fish himself at the market, and drying adds a aged, fermented depth that fresh seafood lacks.
