The story
HAJIME, at 1-9-11 Edobori, Nishi-ku, Osaka, runs a contemporary omakase kitchen that earned three Michelin stars in 2026. The restaurant also holds an 18-point rating from Gault&Millau in the same year, and its cooking is built around the idea of fine, deliberate balance.
According to the restaurant, HAJIME opened its first location in Osaka in May 2008. The team describes its cuisine as conceptually designed and refined to very small measures, working "beyond millimeters and milligrams." Fusion touches run through the menu, which is served in the omakase format.
The website organizes the group's wider work under six gastronomies: Restaurant, Installation, Singularity, Medical, Social and Space. The philosophy page frames food as a driver of human progress, and the restaurant hopes guests leave with "a lasting impression of amazement, enchantment, and hope."
