The story
Kosmo Taste the Mountain is an Alpine restaurant in Livigno, at via Bondi 473/a, 23041. The Michelin Guide lists it as Recommended in 2026, and the kitchen works with contemporary Alpine cooking drawn from high-altitude producers.
The chef first checks what trusted mountain producers have on offer, then buys the freshest seasonal ingredients and writes recipes around them. Because the high valley grows few crops, staples such as olive oil stay off the plate, and preparations change with what is available.
Nothing is treated as scrap. Fish skins become crisp garnish chips, trout tails and bones reduce into a broth served with the dish, and cores and hard seeds are ground into powder for sauces and cocktails. Natural fermentation carries the kitchen through the long winters.
