The story
Spago by Wolfgang Puck occupies the ground floor of the Matild Palace at Váci utca 36 in Budapest, where its Californian-leaning kitchen earned a Gault&Millau score of 14.5 for 2026. It is the first European outpost of Wolfgang Puck's Beverly Hills flagship and serves breakfast, lunch and dinner.
Executive chef István Szántó translates Puck's seasonal approach into a menu that draws on the gastronomic heritage of the Austro-Hungarian Monarchy. Italian burrata, Scottish salmon, Hungarian buffalo and mangalitsa pork appear among the star ingredients, with subtle Asian touches woven through the dishes. Sunday brunch runs from 12:00 to 15:00 and gives the kitchen a more relaxed rhythm.
The goulash soup is a fusion take on the classic, brightened with green coriander and celery and given depth by slow-braised beef cheek and toasted spaetzle. The chicken suprême arrives with crisp skin and a light Asian note. The veal jus is silky and glossy, and the ratte potato purée pays tribute to Joël Robuchon. A separate sushi menu lists yuzupon scallops sashimi and a bluefin tuna lemon roll.
Marble, brass, wood and leather set the tone, and open show kitchens and food counters line the room. Large windows bring in daylight, and a striking bar anchors the space. In warmer months the Duna Street terrace is the place to sit outside. The wine list is global but includes notable Hungarian bottles, and the handcrafted cocktails include a Negroni and an Old Fashioned. Desserts include dark chocolate soufflé and somlói galuska in chocolate shells.
