The story
bistronauten, at Kopernikusstraße 43 in Weinheim, is a bistro with an international kitchen that the Michelin Guide lists as Recommended for 2026. The restaurant cooks a short daily menu built on regional produce, and the board changes with the season.
The kitchen cooks three main courses each day, one with meat, one with fish and one vegetarian, plus soup, salad, dessert and cheese. Produce comes from small producers in the region. Winter brings braised dishes, and summer dishes turn lighter.
A recent menu listed carrot soup with coriander and sesame, wild boar goulash with braised cabbage and Schupfnudeln, pike-perch (zander) with spinach and mustard sauce, and beetroot dumplings with horseradish, Alb lentils and apple. Dessert was plum with brioche and coffee, or raw-milk cheese with chutney and fruit bread. The set price was 65 euros including water, and the menu can change at short notice.
The room sits in an old railway station building with exposed brickwork, and the open kitchen is the centre of it. Schlemmer Atlas awards it two Kochlöffel for 2026. Service stays unhurried even when the restaurant is full, and the dress code is relaxed. The team also visits winemakers and brings home the wines they enjoy.
