The story
Bachofer at Marktplatz 6 in Waiblingen holds one Michelin Star (2026) for its Asian-inspired fusion cooking, led by chef Bernd Bachofer. The restaurant sits in a half-timbered house in the old town.
Bernd Bachofer has run the kitchen since February 2003. His style draws on trips through Southeast Asia, Japan and China, with molecular touches used only when they improve a dish. Der Feinschmecker (2.5, 2026) points to a starter of house-smoked hamachi with shiso cream, buttermilk dashi, cucumber-wasabi ice and caviar. The sushi rice is Koshihikari from Niigata, the miso comes from the Black Forest, and sushi is served on Thursdays by pre-order.
The building is a former pharmacy from 1647, the second-oldest house in Waiblingen. Its modern interior contrasts with the timber frame. The dining room seats 45, and a dining bar around the fully glazed kitchen seats another 10. Upstairs, the private room Pranger11 holds 12 guests. In summer the terrace opens, lit by torches in the evening.
Head sommelier Mario Völpel looks after a list of about 250 selections, strongest in Württemberg, Mosel, Spain and Austria. The eight-course menu can be ordered with matching wines by the glass. Winemaker presentations and tastings are held in the house regularly.
