The story
June sits at Seestr. 10 in Übersee, Germany, where chef Rico Birndt runs a modern cuisine restaurant that holds one Michelin star (2026). The kitchen cooks regional, seasonal food in a former boathouse on Lake Chiemsee.
Rico Birndt trained at the Sheraton Salzburg and cooked in kitchens in Hamburg, Bornholm, Auckland and Munich before opening June in April 2024. He ferments his own shoyu, miso and garum, and grows herbs and vegetables on the terrace. The Schlemmer Atlas awards the kitchen 3.5 Kochlöffel (2026).
Dinner is a surprise menu of eight or twelve courses, and guests choose the small or large version on arrival. Diners pick a regular, pescetarian or vegetarian menu when booking, but there is no vegan option. Dishes described by Der Feinschmecker include Chiemsee pike perch sashimi with house-made smoked fish garum, and six-week aged beef tenderloin grilled over charcoal with green tomato salsa. Reservations open exactly two months ahead, and each table is given out only once per evening.
