The story
Silberstreif, at Schindelbruch 1 in Stolberg, is a modern German restaurant inside the Naturresort & Spa Schindelbruch in the Südharz. Michelin lists it as Recommended for 2026, and its kitchen builds seasonal menus around the Harz region.
Eric Jadischke leads the kitchen and gathers herbs, berries and mushrooms in the surrounding forest when his schedule allows. The menu runs five to seven courses and changes with the seasons, so the produce on the plate follows what the land offers. Guests often mention that Jadischke carries and explains the courses himself. Der Feinschmecker rated the restaurant 3.5 for 2026.
Dishes pair earthy ingredients like peas, pearl barley, beetroot and salsify with veal, zander or pork knuckle. Tables are laid with Meissen porcelain, including a service developed for the restaurant. The wine list leans on VDP estates from the Saale-Unstrut region, and a non-alcoholic pairing uses the house spring water.
