The story
Kugelmühle, at Georg-Schäfer-Straße 30 in Schweinfurt, is a Classic French restaurant that earned 2.5 Kochlöffel in the 2026 Schlemmer Atlas. The kitchen works in a French style with Mediterranean and regional touches, and the restaurant sits in a commercial area not far from the main train station.
Max Matreux owns the restaurant and leads the kitchen, and he has cooked here since 2001. He trained in well-regarded kitchens across Germany and grew up near Lohr, though his name and French ancestry point further west. The menu follows the seasons, with dishes built from seasonal ingredients and influences from French, Mediterranean and regional cooking.
Foie gras is one of the house signatures, served fried with glazed apple wedges. Other main courses include turbot under a rösti crust in saffron and lime sauce, and half a stuffed quail in grape sauce with kohlrabi and pommes dauphine. A five-course menu is listed at 85 euros, with four- and three-course versions available. The restaurant also holds a Michelin Recommended listing for 2026.
The restaurant describes its room as stylish and modern, with a light and relaxed feel for business lunches and quiet dinners for two. Desserts stay classic: a white chocolate ice savarin with dark chocolate mousse, and crêpe Suzette with orange segments and house-made vanilla ice cream.
