The story
Landhaus Zum Rössle sits at Zeilwiesen 5 in Schwäbisch Hall, where the kitchen cooks a Swabian and French menu and earned a Michelin Bib Gourmand in 2026 for good quality, good value cooking. The estate, in the village of Veinau, has been in the same family since 1493.
Chef Ernst Kurz Jr. reworks traditional Swabian dishes in a modern way, keeping their plainness while adding a more international, creative edge. Before taking on the kitchen here, he spent 12 years in gourmet restaurants, among them Restaurant Adler in Fläsch, Switzerland, Kastelle Burg Wernberg, and the Sea Cloud. The dishes lean on regional produce and on the estate's own game.
The house is a Slow Food member, and its suppliers include Feinkost Knausenberger, Löwenbrauerei Hall, Hohenloher Fruchtsäfte and Kartoffelhof Link. Mondays bring the "Schwaben-Abend", and Tuesdays feature a dedicated schnitzel menu. Guests can choose a wine to accompany the meal in the Gasthaus rooms, which include a Stammtisch table and a breakfast room.
The Schlemmer Atlas, which awarded the estate 2,5 Kochlöffel for 2026, describes a rural property with a restaurant, hotel, large garden, hunting lodge and a barn with a conservatory. The historic Eventscheune holds 70 to 400 guests and sits next to the Wintergarten. The Jagdhütte, a hunting lodge for 10 to 20 people, has its own wood stove. Couples can also marry in the private forest between May and September.
