The story
LOUIS restaurant at Prälat-Subtil-Ring 22 in Saarlouis serves modern French cooking and holds two Michelin stars (2026). It sits inside the La Maison boutique hotel, where chef Sebastian Sandor leads the kitchen.
Sandor's cooking shows a clear love for Japan, set on a classic French foundation. He works with the finest ingredients, from vegetables to fish and seafood. Animal and vegetarian produce carry equal weight on the menu, which comes in two versions, one of them vegetarian.
Cured venison loin is sliced into a tartare and served with black garlic ice cream, cherry blossom gel and beetroot. Butter-fried ray wing arrives with fermented rhubarb and flamed grapefruit, finished with buttermilk and tonka bean. The Black Forest entrecôte has an intense grilled aroma and sits on sushi rice with cucumber and a mix of dill, mint and coriander.
The dining room was once a courtroom, and it still has high ceilings and large windows over the garden. Vintage furniture, bold colours and floor-to-ceiling photographs define the look. The wine list focuses on Germany, Burgundy and Bordeaux, with dedicated non-alcoholic pairings.
