The story
Restaurant Mittermeier in Rothenburg ob der Tauber serves modern cuisine at Vorm Würzburger Tor 7, inside the Villa Mittermeier boutique hotel. It holds a Michelin star (2026), and the menu is built for casual fine dining at a high level.
Thorsten Hauk is the head chef. The kitchen works without silver cloches or white gloves, relying instead on high-quality base ingredients and clear, direct cooking. Christian Mittermeier has cooked for guests across the world, and the menus reflect that range.
Tasting menus run five, seven or nine courses. Der Feinschmecker rated the restaurant 3 in 2026 and singled out an eggplant dish with a Szechuan kick, miso and coriander, plus a cauliflower course with vadouvan and buckwheat. Local produce appears too, in quail with creamed spinach and fermented garlic, and in Lake Constance buffalo served with head lettuce and lovage.
The list holds 360 selections from Europe and beyond. The house Tauberhasen wines come from the hotel's own organic vineyards, where 125 bee colonies also pollinate the vines and supply the honey used in the kitchen. The dining room has a warm, living-room feel with picture shelves, and the kitchen is open beside it.
