The story
Die Brasserie at Landauer Str. 103-105 in Pirmasens holds one Michelin star (2026) for a French-leaning kitchen that mixes brasserie classics with a contemporary hand. It sits in the former Waldschlöss'l manor, close to the French border.
Vjekoslav Pavic, who is Croatian, spent almost a decade in top-end kitchens before opening here in 2014. One of those years included three as sous chef at Residenz Heinz Winkler. Sandor Kalman runs the kitchen day to day as Küchenchef. The team buys without compromise and uses no pre-processed ingredients. Fish comes from sustainable catches, and the plating stays plain.
Pears, beans and bacon is a signature, as are roasted chestnuts with Brie de Meaux cream and scallops pan-seared in nut butter. Vegetarians get a slow-cooked organic egg with braised leeks, sunflower seeds and white pepper sauce. The menu changes often with the seasons. Der Feinschmecker rates the cooking 2.5 (2026) and calls it rustic simplicity with refinement.
The dining room has a Parisian touch and classic brasserie ambiance. Lena Pavic hosts, and service is attentive without hovering. The wine list leans toward the Pfalz, with good bottles by the glass. After you have been advised, the bottle is left on the table so you can pour it yourself.
