The story
Weinstube am Brühl, at Billungstraße 11 in Quedlinburg, serves international cooking under a brick ceiling at the edge of the old town. The Schlemmer Atlas awarded it 2 Kochlöffel in 2026.
Sebastian Lorenz leads the kitchen team. The menus change with the seasons and set tradition beside newer ideas. Products come from nearby producers wherever possible, which suits the farm-to-table approach of this world cuisine kitchen.
A recent menu opened with dashi broth, pickled mushrooms and coriander. Smoked trout arrived with citrus, miso and tramezzini, and saddle of deer with cranberry, Brussels sprouts, black salsify and walnut. Vegetarians and vegans have their own dishes, among them a vegan truffle pasta with green asparagus and noble mushrooms.
The restaurant occupies a former stall building where rustic timber meets modern, lounge-style furnishings. The wine list gets real attention, and the Michelin Guide lists the Weinstube as Recommended for 2026. The wine tavern menu costs 69 € per person, or 89 € with a 0.1 l pairing glass for each course. In summer, tables are set in the inner courtyard.
