The story
KIKU Restaurant by Jan Fribus in Quedlinburg serves modern Asian cooking at Pölle 8, and the Michelin Guide listed it as Recommended in 2026. Chef Jan Fribus builds his menu on European craft with Asian aromas, so the courses feel modern without losing a clear European base.
Jan Fribus blends European craft with Asian flavors. The dishes aim to read clear and reduced, yet they hold depth and a few surprises. The menu follows the seasons and draws on small farms, local producers and ingredients from further afield. Schlemmer Atlas gave the restaurant 2.5 Kochlöffel for 2026, pointing to the thoughtful Asian accents in its seven-course creative menu.
Recent courses include hamachi with radish, leche de tigre and ponzu, and a char siu bao with kimchi. Chawanmushi arrives with ikura, crab, white asparagus and bisque. Hibachi rabbit comes with malt potato pancakes, carrots and a jus. The matcha honey cake closes the sequence, served with chia, melon, mint and praline. Some courses are carried to the table by the kitchen team, which keeps the room personal.
