The story
Müllers auf Norderney is a contemporary French bistro at Am Weststrand 3 on Norderney, and the second branch of chef Nelson Müller's Müllers restaurants. Michelin lists it as Recommended for 2026. The restaurant sits in a small, family-run boutique hotel directly on the beach promenade.
The kitchen builds much of its menu around the sea. Prunier caviar from Siberian sturgeon comes in a 15 g portion, served classically with blinis, chives, shallot, chopped egg and crème fraîche. Gillardeau oysters arrive with onion vinaigrette and Chesterbrot, and half a dozen can be paired with a glass of Moët & Chandon Impérial Brut.
Balik salmon Tsar Nicolaj is served with cucumber noodles, potato fritters and a buttermilk broth. The bouillabaisse, with Venus clams and rouille, shows the French bistro side of the menu.
Meat is cut at the butcher counter, and the menu includes beef tartare on toasted sourdough with Deichkäse and egg yolk cream. The house sourdough comes with salted butter from the Black Forest. The Schlemmer Atlas awards the restaurant 2 Kochlöffel for 2026, and guests can sit outside with a view of the sea.
