The story
Spitzner is a modern French restaurant at Königsstraße 42 in Münster, Germany, and it holds one Michelin star (2026). Chef Karl Nikolas Spitzner leads the kitchen in the Oer'sche Hof, a baroque palace in the city centre.
The French classics here rest on precise technique and premium ingredients. Produce comes preferably from the region, though the kitchen does not treat that as a rule. Nose to tail cooking runs through the menu, so offal and less prized cuts appear alongside the premium pieces. The à la carte changes with the seasons and with what hunters and producers bring in.
The foie gras arrives as both terrine and ice cream, balanced with poached mandarin and celery. Sea bass is served with a purée of veal head and nut butter. Other dishes have included Pyrenean lamb with wild garlic and gnocchi, and a Jivara chocolate dessert with bergamot and carrot. Vegan dishes are not offered, so guests with dietary needs should mention them when booking.
The restaurant occupies the Oer'sche Hof, an aristocratic palace that came through the Second World War largely intact. Dining rooms combine historic walls and high ceilings with a modern, understated look. Wine pairings are curated by Master Sommelier Patrick Stewart, and about a third of the wine list changes over the year.
