The story
Backmulde, at Hauptstraße 61 in Ladenburg, is a fusion restaurant with a modern French and Mediterranean streak, listed as Michelin Recommended (2026). The kitchen builds seasonal multi-course menus, and a small wine shop operates in the same house.
The kitchen works closely with regional suppliers and has brought back older vegetable varieties, which shapes the menu from season to season. Slow Food principles and animal welfare guide how the team buys and cooks. Fish and meat are not the centre of each plate. The aim is a dish that pleases the eye, melts on the tongue and leaves a lasting impression, with particular attention to sauces and soups.
A Backmulde menu has included grilled octopus with fennel, chorizo and black aioli, and a shellfish foam soup with kimchi. Homemade caramelle filled with spinach and egg yolk, finished with hazelnut and truffled Scamorza, sit alongside lamb saddle served pink with polenta and wild broccoli. The Schlemmer Atlas (2026) awards three Kochlöffel and highlights the homemade porcini ravioli. The winter menu offers pink-roasted prime beef tenderloin with braised ox cheek, and the dishes change with the season.
The restaurant occupies a half-timbered house in the town centre, with historic dining rooms and a stylish interior. The wine list includes bottles such as a 2025 Sauvignon Blanc from Neustadt, and the wine shop lets guests take bottles home. Tasting evenings are available on request through the maître d'hôtel.
