The story
Gasthaus zum Adler stands at Weinstraße 47 in Klingenmünster, near Landau in der Pfalz, where sisters Christine and Franziska Baumann run a seasonal South American kitchen. The restaurant earned a Michelin Recommended distinction in 2026.
Christine cooks creatively, sustainably and without fuss. She trained at the restaurant d/\blju W in the Hotel im Wasserturm in Cologne, a five-star superior house. She later worked in Cologne's La Poêle d'Or and at Redüttchen in Bonn-Bad Godesberg. In 2013 she won the Rudolf Achenbach Prize, and in 2014 she placed third for Germany at the Hans Büschkens Young Chefs Challenge in Norway.
The menu changes monthly and follows the region and the seasons. A March card listed a teres major steak with chimichurri, avocado and black beans, a trout fillet with aji amarillo, and tagliatelle with wild garlic, spinach, almonds and Pecorino. The dessert list closed with carrot cake, sea buckthorn and sour cream ice cream.
The Baumann family has owned the house since 1869, and the fifth generation now runs it. Franziska leads the front of house and brings twelve years of life in Guatemala to the room. After a full renovation from 2019 to 2023, the Adler reopened in autumn 2023. The wine list features Palatinate growers, alongside regional beers, house-made lemonades and a few spirits from Latin America.
