The story
ACHT is a French-accented restaurant and wine bar at Spichernstraße 10 in Köln, where the kitchen pairs regional produce with French technique. The Schlemmer Atlas awarded it two Kochlöffel for 2026, and Michelin lists it as Recommended in the same year.
Simon Kollmann leads the kitchen with his team, cooking innovative regional dishes with French elements. Menus and the à la carte card change several times a year, following the seasons rather than a fixed repertoire.
The printed menu has included quail breast with salsify, shiitake, sesame and bergamot, and an Eifel rabbit leg with beech mushrooms and potato. Iberico pork presa comes with wild broccoli, white beans and sea buckthorn, and the dessert list offers a muscovado crème brûlée and a Madeleine with Madagascar vanilla and lemon.
Wine shelves built from Euro pallets stand against raw, unplastered walls, and guests sit at wooden tables facing the open kitchen. In summer, the terrace in the courtyard of the Spichern Höfe is the place to be. Groups up to 23 can book, and the restaurant can also be reserved exclusively.
The list holds around 200 bottles that change through the year, from crisp summer whites to fuller reds in winter. Many producers work biodynamically, and the selection focuses on Europe's major wine regions.
