The story
Schiller's Manufaktur sits at Mayenerstraße 126 in Koblenz, where a French brasserie kitchen earned one Michelin star in 2026. The restaurant serves classic French cuisine alongside Mediterranean dishes, in a room a few minutes' walk from the Moselle riverbank.
Mike Schiller previously worked as head chef at the late Lothar Eiermann's restaurant, and his French classics are consistently reliable. The Breton lobster cassoulet has a fresh, oceanic depth. The Boeuf Bourguignon is velvety and balances wine and spice well.
Crêpes Suzette arrive paper-thin and citrus-scented. Twice a year the kitchen presents Phantas-Tisch, a plant-based surprise menu that reworks vegetables and fruit into new forms. The spring and summer version leans fresh and light, while the autumn and winter edition is heartier and more aromatic.
Melanie Stein-Schiller oversees the service, and the atmosphere feels warm and familial. A garden pavilion and summer terrace extend the room outdoors. The wine list offers around 60 German and French selections, several of them by the glass.
