The story
Halbstück sits at Hollergasse 2 in Bissersheim, 67281, part of Kirchheim an der Weinstraße, and cooks a French classic cuisine with Alsatian and Palatinate roots. The Michelin Guide lists it as Recommended for 2026.
Alsatian chef and confectioner Christian Rubert has spent years in the upper end of the restaurant scene. The brasserie menu leans on classics like "Façon Bouillabaisse" fish soup and filet Rossini. The Schlemmer Atlas gives the restaurant 2,5 Kochlöffel for 2026.
The menus change with the seasons. Recent cards have included zander fillet on Palatinate Riesling sauerkraut, guinea fowl breast with broad ribbon pasta, and a cheese course with Normandy salted butter. Oysters come in several preparations, and the kitchen also serves dry-aged cuts and vegetarian plates. Seven- to eight-course seasonal menus are available on request or by advance order.
The building dates from the Baroque era. The brasserie opens onto a courtyard under sun sails, and a separate fine dining room hosts the more formal menus. The vaulted hall and the barn can be booked for weddings and company events.
