The story

sein Karlsruhe: Two Michelin Stars for Modern Cuisine (2026)

sein, at Scheffelstraße 57 in Karlsruhe, is a modern cuisine restaurant that earned two Michelin stars in 2026. The menus are built as multi-course sequences, and the kitchen draws on Scandinavian and wider world cuisine references.

Thorsten Bender's cooking

Head chef and owner Thorsten Bender leads the kitchen with sous-chef Manuel Herzog. Der Feinschmecker describes his style as imaginative, varied haute cuisine that builds clear flavour contrasts from many components. Japanese flavours and techniques remain a constant thread. Dinner runs to around six courses, and lunch offers four to eight.

Dishes from the pass

The guide singles out a few plates. Breast of Burgaud duck from the Vendée comes with chicory and bigarade sauce, foamed white pepper sauce and cranberry. IJsselmeer zander is served with pho, egg yolk cream and coriander oil. Faroese kaiser grenadier is cooked briefly and paired with orange oil, ginger-pumpkin purée and a spicy kalamansi beurre blanc.

The room and the table

Black-and-white interior design sets a stylish frame, and the service is friendly and relaxed. The wine list leans on Baden winemakers, with French and Italian bottles alongside. A separate private table seats up to 10 guests for a surprise menu, and vegetarian or pescatarian versions are available on request.

Concept Menu with 6 to 8 courses, also available as a vegetarian or pescatarian variant upon request. Lunch menu (4–8 courses), with a more affordable surprise menu on three days. Culinary Style Horsten Bender has long been synonymous with imaginative and varied haute cuisine, mastering the rare art of distilling clear flavor contrasts from numerous components. He remains faithful to his affinity for Asian, particularly Japanese, flavors and techniques. The breast of Burgaud duck from the Vendée is served with chicory and bigarade sauce – accompanied by foamed white pepper sauce and cranberry in a beautiful interplay of aromas. The IJsselmeer zander comes with pho, egg yolk cream, and coriander oil, while the deep-sea redfish (kaiser grenadier) from the Faroe Islands, cooked as briefly as possible, tastes wonderfully mineral. This is complemented by wonderful contrasts of orange oil, ginger-pumpkin purée, and a ginger-spicy kalamansi beurre blanc. Wine Extensive selection of top-tier wines from Baden winemakers, as well as French and Italian wines. Atmosphere Stylish black-and-white contrasts define the interior design, while friendly and relaxed service sets the mood. Verdict Sophisticated culinary delight that continually surprises anew.
