The story
Bachmaier is a Fusion and Mediterranean restaurant at Untere Neckarstraße 40 in Heilbronn, listed as Recommended by the Michelin Guide in 2026. It sits in the city center, directly on the Neckar.
Ulrike and Otto Bachmaier run the restaurant themselves, both trained as Restaurant- und Küchenmeister with many years of experience. The room is small, plain and comfortable, with five tables. In summer, service moves to the terrace. The Schlemmer Atlas awarded 2.5 Kochlöffel in 2026.
Dinner is a set menu of up to six courses. The hosts describe it as straightforward cooking from the best products. One version opens with Canadian scallop, aubergine, sautéed tartivo and tapioca in wood-barrel-aged soy sauce. A wild garlic soup served in a glass follows, then a small course of Eierknöpfle with veal tail sugo and Parmesan foam.
Black Forest char is cooked gently and comes with spring onion, kohlrabi and mashed potato with crème fraîche. Label rouge guinea fowl sits on beluga lentils with pointed cabbage and ginger. The finish is a house-made vanilla ice parfait in a Valrhona chocolate capsule, with rhubarb and pumpkin seed crumble.
A vegetarian menu is prepared on request. The kitchen asks guests to name any intolerances in advance so it can plan the evening properly.
