The story
The Wild Duck cooks modern fusion cuisine at Podbielskistraße 167 in Hanover, and the Michelin Guide listed it as Recommended in 2026. The restaurant calls itself casual fine dining.
Viet Anh Nguyen founded the restaurant and has led its kitchen since 2020. His cooking joins Asian and French influences in a five-course menu that guests can adapt to their taste. The Schlemmer Atlas gave the restaurant 3.5 Kochlöffel in 2026, noting that he explains and advises at the table himself. The menu changes roughly every four weeks and draws on seasonal, regional ingredients.
A recent menu opened with hamachi and paprika, or a vegan pho with shallots and coriander. Mains were skrei with Jerusalem artichoke and pineapple, or beef with kale and celery. Dessert offered a choice between Roquefort with pumpkin and ginger, and a vegan plate of Robusta, blueberries and lavender. Every course can be taken classic or vegan.
The wine pairing (67 €) centers on exclusive and biodynamic bottles, while the non-alcoholic pairing (51 €) is built with the same care. The menu itself costs 105 €. An optional upgrade (25 €) adds a Thai curry and pear course named after the restaurant.
